Ingredients

  • 1 kg plums
  • 2 cm fresh ginger
  • 1 cinnamon stick
  • 1 kg fruit sweetener (1:1)

Instructions

    Score the plums crosswise, briefly rinse them in hot water, cool, peel, halve, remove pits and dice the flesh. Peel the ginger and grate finely. Mix the plums and ginger, add the fruit sweetener and cinnamon stick, cover and let steep for about 6 hours.

    Then slowly bring to a boil with the cinnamon stick, stirring, and simmer for 3 minutes until sparkling. Remove the cinnamon stick, stir in lemon juice, and immediately pour hot into prepared jars. Seal well and stand upside down for 10 minutes. Turn upright and cool. Store in a cool dark place.
