English Orange Marmalade
Spoonsparrow English orange marmalade: oranges score with the carotenoids beta-carotene, lutein and zeaxanthin.
Ingredients
- 750 g organic orange
- 1 lemon
- 250 g gelatin sugar 3:1
- 2 tbsp rum
- 1 tsp cinnamon

First boil jars with lids for about 10 minutes in a large pot of hot water. Then remove the jars from the water and place them upside down on clean kitchen towels to cool.

Rinse oranges while hot, pat dry, grate the peel of three oranges finely and set aside. Halve and filet the oranges. Cook half the fruit with a little water in a pot until it becomes fine purée. Zest the lemon and squeeze its juice.

Bring the orange purée and juice together with sugar in a pot to boil and cook for about 4 minutes while stirring constantly. Skim off the rising foam with a ladle. After cooking, stir in the grated orange peel.

Remove the pot from heat and fill the prepared jars with the marmalade after testing its setting. Seal immediately and place them upside down for 5 minutes.
