Ingredients

  • 1300 g sour cherry
  • Kirschsaft (as noted)
  • 1 packet Gelierfix (3:1, for each 350 g sugar and 1 kg fruit)
  • 1 EL ascorbic acid
  • 350 g sugar

Instructions

    Wash the cherries hot and bring to a boil in a pot while stirring. Cook soft for about 10 minutes then strain through a sieve. Weigh the resulting fruit pulp and top up with cherry juice to 1 kg.

    Mix Gelierfix, ascorbic acid and sugar. Bring the fruit pulp to a boil and stir in the sugar mixture. Boil bubbling under stirring for about 5 minutes, then ladle hot into jars. Seal tightly and let cool standing upright.
