Zucchini Cheese Salad with Watercress

Ingredients
- 500 g zucchini
- 250 g Gouda
- 1 hard boiled egg
- 2 cornichons
- 1 Shallot
- 3 tbsp chopped mixed herbs (e.g., parsley, dill, chives, sorrel)
- 3 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 5 tbsp Rapeseed Oil
- 1 radicchio
- 1 pack watercress

Wash and trim the zucchini, then slice into thin sticks or grate.

Grate the cheese over the zucchini. Finely chop the egg and cornichons. Peel and dice the shallot. Mix the egg, cornichon, and herbs together and add to the zucchini-cheese mixture.

Whisk together vinegar, salt, pepper, and oil. Pour the dressing over the salad and combine well, tasting as you go.

Carefully separate the radicchio leaves from the stem, trim off the core, remove any thick white rib if desired, rinse, and dry thoroughly. Arrange the leaves on plates and place the salad on top.

Cut fresh watercress from the bed and scatter over the salad. Serve immediately.
