Matjes Salad
A fresh salad featuring lightly cured herring fillets served with baby spinach, oregano leaves, red onion rings, scallion ribbons, apple slices, sea salt and a dollop of sour cream for serving. Enjoy this dish from Spoonsparrow!
Ingredients
- 1 handful baby spinach
- 0.5 handful young oregano leaves
- 1 Red Onion
- 1 Spring onion
- 4 matjes fillets
- 0.5 red-skinned apple
- coarse Sea salt
- 120 g sour cream (for serving)
Instructions

Wash the spinach and oregano leaves, then pat them dry with kitchen paper.

Peel the red onion and slice it into thin rings; clean and cut the spring onion into fine ribbons.

Cut each matjes fillet into approximately 2 cm wide, bite‑size pieces.

Wash the apple, quarter it, remove the core, and slice or shave it into thin strips.

Arrange the spinach, matjes pieces, red onion rings, and apple strips in four decorative bowls. Garnish with spring onion ribbons and oregano leaves, then sprinkle with coarse sea salt. Serve with a side of sour cream.
