Ingredients
- 500 g ground almonds
- 5 egg whites
- 450 g powdered sugar
- 2 tsp Cinnamon
- 20 ml kirschwasser (cherry brandy)
- sugar (for dusting the work surface)

Whisk egg whites until stiff, fold in powdered sugar.

Set aside 1 cup of the meringue for glaze.

Add almonds, cinnamon and kirschwasser to the remaining meringue, quickly knead into dough and cover; chill in refrigerator for about 1 hour.

Dust a work surface with sugar, roll dough to ~4 mm thickness, cut star shapes of varying sizes, coat each with glaze, place on parchment-lined tray and let dry overnight at room temperature.

Bake the cinnamon stars in a preheated oven at 160 °C for about 8 minutes; they should remain soft inside while the tops stay white.
