Cinnamon Cookies

Ingredients
- 200 g Flour
- 2 tsp Cinnamon
- 1 tsp Baking powder
- 80 g sugar
- 1 packet vanilla sugar
- 1 untreated lemon (zest)
- a pinch salt
- 1 egg
- 125 g butter
- 1 egg yolk
- 0.5 tsp cinnamon
- 100 g powdered sugar
- 1 tbsp milk

Gather flour and baking powder on the work surface, create a well in the center. Add sugar, cinnamon, vanilla sugar, lemon zest, salt, and egg; mix with half the flour into a dough. Place cubed butter on top of the dough and cover with flour. Quickly knead into a single dough, wrap in foil, and chill for 20 minutes.

Preheat oven to 190 °C. Roll out dough to 5 mm thickness on a floured surface, cut out circles, and place on parchment-lined baking sheet. Bake in preheated oven for 10 minutes until golden yellow. Remove and cool on a rack.

Whisk powdered sugar with milk into a thick glaze; brush over cookies. Let dry fully.
