Cinnamon Cookies

Ingredients

  • 500 g ground almonds
  • 5 egg whites
  • 450 g powdered sugar
  • 2 tsp Cinnamon
  • 20 ml kirschwasser
  • powdered sugar (for the work surface)

Instructions

    Preheat oven to 160°C.

    Whisk egg whites until stiff, fold in powdered sugar.

  3. 3.

    Set aside one cup of meringue for glazing.

  4. 4.

    Add almonds, cinnamon and kirschwasser to the remaining meringue, quickly knead and cover dough; refrigerate for about 1 hour.

    Dust a work surface with sugar, roll dough to ~4 mm thickness, cut star shapes of various sizes, coat each with glaze, place on parchment-lined baking sheet and let dry at room temperature overnight.

    Bake cinnamon stars in preheated oven for 8 minutes; they should remain soft inside while the surface stays white.
