Yogurt Muesli with Pineapple

Ingredients

  • 2 fresh ripe baby pineapples
  • 12 tablespoons thick rolled oats (or other cereals as desired)
  • 4 tablespoons pine nuts
  • 4 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 800 g yogurt (low-fat or cream yogurt as preferred)
  • 2 tablespoons honey
  • 2 teaspoons cinnamon

Instructions

    Wash the pineapple, peel it with a sharp knife and cut lengthwise in half. Remove the core if necessary and slice the fruit into 0.5–1 cm thick pieces, catching the juice. Set aside 12 slices loosely, dice the rest finely, and mix with the oats in four bowls, drizzling with pineapple juice.

    Combine the seeds together and sprinkle half over the oat mixture.

    Whisk the yogurt with honey until smooth and pour it over the oat mixture.

    Garnish the muesli with pineapple slices and remaining seeds, dusting with cinnamon before serving.
