Coconut Overnight Oats with Spiced Pears

Ingredients
- 250 ml coconut milk
- 200 g yogurt (1.5% fat)
- 100 g shredded coconut
- 100 g rolled oats
- 30 g Sunflower seeds (2 tbsp)
- 10 g chia seeds (2 tbsp)
- 15 g sesame seeds (1 tbsp)
- 4 tbsp Honey
- 1 tbsp Coconut oil
- 2 pears
- 1 tsp butter (5 g)
- 0.5 tsp cinnamon
- 0.25 tsp vanilla powder

Whisk together coconut milk, yogurt, half the shredded coconut and oats, sunflower seeds, chia seeds, sesame seeds, and 2 tablespoons of honey. Divide into glasses and refrigerate for 12 hours, preferably overnight.

Finely chop the remaining shredded coconut and oats in a food processor. Heat coconut oil in a skillet. Toss the coconut-oat mix in the skillet and stir until golden brown after about 5 minutes on medium heat. Remove from heat and let cool.

Meanwhile wash, peel, halve, core, and cut the pears into wedges. Melt butter in a pan. Brown the pears with remaining honey, cinnamon, and vanilla for 3–4 minutes over medium heat. Set aside and allow to cool briefly. Serve by topping the overnight oats with the pears and toasted coconut mixture.
