Ingredients
- 3 egg yolks
- 50 g caster sugar
- 1 lemon
- 200 g Quark (20% fat)
- 400 g yogurt (3.5% fat)
- 12 sheets white gelatin
- 250 ml Whipping Cream
- 400 g mango puree

Beat the egg yolks with caster sugar until pale and frothy. Squeeze in the lemon juice. Mix the sugar mixture with quark, lemon juice, and yogurt. Separate 3 sheets and 9 sheets of gelatin to soak. Drain the 9 sheets well and gently warm them in a small pot until the gelatin dissolves. Stir in some quark mixture (to balance temperature), then fold into the remaining quark mixture. Whip the cream stiffly and fold it into the quark mixture.

Drain the 3 sheets of gelatin and melt them in a small pot, whisking in 3 tablespoons of mango puree. Then stir this into the remaining mango puree.
