Strawberry Mascarpone Parfait

Spoonsparrow: We transform fresh summer fruit into a super delicious and creamy strawberry parfait with mascarpone!

Ingredients

  • 500 g strawberries
  • 150 g dark chocolate
  • 100 g Mascarpone
  • 3 eggs
  • 50 g caster sugar
  • 100 g whipping cream

Instructions

    Wash and dry the strawberries, then remove stems. Break the chocolate into small pieces and melt over a hot water bath.

    Take about 100 g of strawberries, coat them halfway with melted chocolate, and place on parchment paper to dry.

  3. 3.

    Cut another 100 g of berries into small pieces and set aside. Place the remaining strawberries in a tall mixing bowl, puree with an immersion blender, strain through a fine sieve, and whisk in mascarpone until smooth.

    Separate the eggs. Beat the yolks in a metal bowl over a hot water bath with caster sugar to form a pale frothy mixture. Then place the bowl in ice water, stirring occasionally, until it cools.

    Fold the cold egg yolk mixture into the strawberry puree. Whisk the egg whites and cream separately until stiff peaks form, then gently fold them into the strawberry mixture.

    Pour the cream into a rectangular cake tin and cover. Freeze for about 3 hours.

    Just before serving, briefly dip the tin in hot water, pour the parfait onto a plate, cut into triangular pieces, and garnish with chocolate strawberries and fresh strawberry chunks.
