Ginger Parfait with Lychees

A ginger parfait with lychees is fresh and fruity. Perfect for hot summer days, as it replenishes our fluid stores.
Ingredients
- 150 g whole cane sugar
- 4 tsp freshly grated ginger
- 1 organic lime (juice and zest)
- 200 ml lychee juice
- 200 ml sparkling mineral water
- 16 lychees

Heat the sugar with ginger and 300 ml water in a pot, simmer for 5 minutes, then remove from heat.

Wash the lime hot, dry it, cut the peel into strips, and squeeze out the juice. Add the lime juice to the ginger-water mixture, strain through a sieve, and let cool.

Peel, pit, and chop the lychees; distribute half onto glasses, add a spoonful of sorbet on top, then layer the remaining lychees and cover with more sorbet. Garnish with lime zest before serving.

Add lychee juice and sparkling water to the mixture, pour into a shallow dish, place in the freezer for 5 hours, stirring every 30 minutes with a fork.
