Chestnut Parfait with Figs and Glazed Chestnuts

Ingredients
- 8 fresh figs
- 250 g chestnut puree (glass)
- 150 g crème fraîche
- 100 g sugar
- 40 ml fig liqueur
- 200 ml whipping cream
- 2 tbsp butter
- 200 g cooked chestnuts (vacuum packed)
- powdered sugar (for dusting)

Line a terrine mold with plastic wrap.

Quarter 4 figs, scoop out the flesh and chop finely. Whisk the chestnut puree with crème fraîche, 50 g sugar and the liqueur until smooth. Beat the cream stiffly and fold it in together with the fig flesh. Pour into the mold, cover with excess plastic wrap and freeze for at least 6 hours.

For the glazed chestnuts caramelize the butter with the remaining sugar. Mix in the chestnuts and spread on parchment paper. Let cool. Quarter the remaining figs.

About 10 minutes before serving, unmold the parfait and remove the plastic wrap. Slice into rounds and arrange on a plate with the figs and glazed chestnuts. Dust with powdered sugar and serve.
