Apricot Parfait with Raspberry Sauce and Strawberries

Ingredients
- 50 g sugar
- 6 tbsp water
- juice of one lemon
- 240 g apricots
- 2 egg yolks (medium)
- 200 ml whipping cream
- 300 g frozen raspberries
- 2 tbsp raspberry liqueur
- 1 packet vanilla sugar
- 200 g strawberries
- mint

Simmer the sugar with water and lemon juice for 2-3 minutes. Drain the apricots in a sieve, catching the juice. Set aside four apricot halves for garnish. Puree the remaining apricots with 4 tbsp of apricot juice.

Whisk the egg yolks until frothy, adding the lemon syrup in a thin stream. Stir in the apricot puree. Whip the cream to stiff peaks and fold it in. Fill the mixture into small molds (about 125-150 ml each). Freeze for 3-4 hours.

Heat the raspberries with raspberry liqueur in a pot. Strain through a sieve. Sweeten with vanilla sugar.

Rinse, clean, and chop the strawberries. Slice apricots for garnish. Briefly dip the molds in hot water for 30 seconds. Serve the parfaits on plates topped with raspberry sauce, strawberries, and sliced apricots, garnished with mint.
