Ingredients

  • 225 g whole wheat butter cookies
  • 75 g soft butter
  • fat for greasing the pan
  • 1 can peaches (465 g drained weight)
  • 1 small can clementines (175 g drained weight)
  • 1 small jar lingonberries (175 g drained weight)
  • 6 sheets of white gelatin
  • 450 g yogurt
  • 1 packet vanilla sugar
  • 90 g sugar
  • 1 tbsp Lemon Juice
  • 1 packet clear tart glaze
  • 125 ml multivitamin juice

Instructions

    Place the cookies in a freezer bag and crush finely with a rolling pin, then mix with the butter. Press into the bottom of a greased rectangular pan (about 30 cm x 18 cm) and refrigerate.

    Drain peaches, clementines, and lingonberries separately. Catch the peach syrup. Soak gelatin in 50 ml of peach syrup.

    Whisk yogurt with vanilla sugar, 75 g sugar, and lemon juice. Dissolve gelatin with peach syrup in a small pot over low heat. Stir in some yogurt, then fold into the yogurt mixture and pour into the pan. Refrigerate for about 2 hours to set. Top with fruit.

    Prepare a glaze from tart powder, remaining sugar, multivitamin juice, and 125 ml water according to package instructions, pour over the fruit, and refrigerate until firm.
