- 280 g sugar
- 200 g Crème double
- 300 g unsalted nuts (e.g., almonds, hazelnuts, walnuts)
- 140 g dried apricots
- 100 g raisins
- 120 g candied pineapple
- 120 g candied cherries
- 120 g melted dark couverture chocolate

Boil the sugar with 200 ml water in a pot and slowly caramelize while stirring. Reduce to a syrupy consistency and remove from heat. Let it cool slightly, stir in the crème double, and return to low heat. Allow to thicken lightly into a creamy sauce.

Add the nuts and fruits to a bowl, pour the caramel over them, and mix well. Transfer the mixture to a buttered ring mold (about 20 cm diameter) and spread evenly. Let it set, then remove from the mold and decorate with melted couverture chocolate before serving.
