Ingredients

  • 200 g dark chocolate (with chopped almonds)
  • 180 g coconut oil
  • 2 Eggs
  • 150 g sugar
  • 1 pinch salt
  • 75 g cocoa powder
  • 150 g butter cookies
  • 2 tbsp almond flakes

Instructions

    Finely chop the chocolate and cut the coconut fat into pieces. Put both in a bowl and melt over a hot water bath, stirring occasionally. Let it cool slightly.

    Beat the eggs, sugar and salt. Stir in the cocoa powder and chocolate mixture.

    Line a loaf pan (25 cm long) with cling film. Layer butter cookies and chocolate mixture alternately, starting with chocolate and ending with cookies. Press the cling film over the cookies. Refrigerate overnight.

    Roast the almonds in a small pan. Remove the cookie cake from the pan and peel off the cling film. Transfer the cookie cake to a plate and sprinkle it with almonds. Tip: Warm a large sharp knife under hot water and dry it. Slice the cookie cake with this knife for a smooth, clean cut surface.
