Yeast Nest Buns

Ingredients

  • 350 g flour
  • 0.5 cube fresh yeast
  • 50 g sugar
  • 140 ml lukewarm milk
  • Salt
  • 75 g soft butter
  • 2 Eggs
  • 100 g Dried Apricots
  • 8 hard‑boiled, multicolored eggs
  • 1 egg yolk

Instructions

    Sift the flour into a bowl and make a well in the center. Crumble the yeast and mix with 1 tablespoon sugar and a little milk. Pour into the well, dust with flour, and let rise for 15 minutes. Add salt, remaining milk, sugar, butter, and eggs; knead into a smooth dough. If too wet, add more flour; if too dry, add more lukewarm milk. Cover and let the dough rise in a warm place for about 1 hour.

    Preheat the oven to 180 °C (350 °F) with upper and lower heat.

    Coarsely cube the apricots and knead them into the dough.

    Divide the dough into eight equal pieces and roll each into a 40‑cm long rope. Twist the rope into a cord, form a circle, and press the ends together firmly. Place one egg in the center of each and let rise for another 15 minutes. Remove the eggs and brush the nests with egg yolk. Bake in the preheated oven for 20–25 minutes.

    Remove from the oven, cool slightly, and serve topped with the hard‑boiled eggs.
