Yeast Dumplings with Breadcrumbs

Ingredients
- 300 g flour
- 0.5 cube fresh yeast
- 5 tbsp sugar
- 150 ml lukewarm milk
- 50 g butter
- 2 egg yolks
- flour (for handling)
- butter (for the sieve insert)
- 200 g butter
- 125 g breadcrumbs
- 1 packet vanilla sugar

For the dough, put flour in a bowl, press a well in the middle, crumble yeast into it, sprinkle sugar over, and pour milk on top. Stir the yeast with the milk and let the pre-ferment rise covered in a warm place for about 20 minutes.

Melt butter and add egg yolks, knead together, and allow to rise again for about 20 minutes. Divide dough into eight equal pieces, knead hard, shape into balls, place on a board and let rest another 30 minutes. In a wide large pot, place a buttered sieve insert and cover the pot bottom with enough water. Bring water to boil.

Place 3-4 dumplings in the sieve insert and steam for 15-20 minutes. Melt butter in a pan, mix with breadcrumbs, and stir in vanilla sugar. Remove dumplings from steam, sprinkle with butter-breadcrumb mixture and serve.
