Ingredients

  • 100 g Soft Butter
  • 80 g sugar
  • 1 large egg
  • 50 g Brown sugar
  • 125 g flour
  • 50 g Oats
  • 1 tsp Baking powder
  • 1 pinch cinnamon
  • 50 g dried cranberries
  • 50 g Raisins
  • 250 g white couverture chocolate
  • 125 ml whipping cream

Instructions

    Preheat the oven to 180°C fan. Line a baking tray with parchment paper.

    Beat the butter until fluffy, then fold in the sugar. Add the egg and brown sugar, beating until light and airy. Mix flour, oats, and baking powder together and stir into the butter mixture. Fold in chopped cranberries and raisins. Drop spoonfuls of dough onto the tray, spacing them apart, and gently flatten each.

    Bake in the preheated oven for 10–12 minutes until the cookies are lightly golden brown. Let cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
