Chocolate-Marzipan Cookies with Cherries

- 200 g chopped almonds
- 100 g dark couverture chocolate
- 200 g marzipan base
- 2 egg whites
- 150 g powdered sugar
- 3 tbsp cocoa powder
- 0.5 tsp cinnamon powder
- 40 amare cherries
- 150 g dark couverture chocolate

Lightly toast the almonds in a pan. Finely chop the couverture chocolate using an electric food processor.

Finely chop the marzipan, then knead in the egg whites one at a time, adding powdered sugar, cocoa, cinnamon and chocolate gradually until you have a smooth dough.

Using a small spoon, scoop out some dough and shape it into balls (about 40) of roughly 3 cm diameter with damp hands. Press a depression into each ball, place one cherry inside, fold the dough over and reshape into a sphere. Arrange on parchment‑lined baking sheet with about 3 cm spacing and bake in a preheated oven at 170 °C (middle rack) for about 12–15 minutes, then remove and cool.

For decoration, roughly chop the chocolate and melt it in a double boiler; dip the tops of the cookies into the melted chocolate and let them dry on parchment. Optionally decorate with powdered sugar or sprinkles using small squeeze bottles.
