Ingredients

  • 600 g beer ham (or Lyoner)
  • 200 g sliced cheese (e.g., Edam)
  • 1 red bell pepper
  • 2 small red onions
  • 2 small white onions
  • 150 ml lukewarm meat broth
  • 1 tsp coarse mustard
  • 2 tbsp fruit vinegar
  • 2 tbsp freshly chopped herbs (chives, parsley)
  • Herb salt
  • Pepper (freshly ground)
  • pinch of sugar
  • 4 tbsp sprouting oil

Instructions

    Remove the rind from the sausage and slice it thinly. Cut the cheese into smaller pieces or slices. Wash the pepper, halve it, deseed it, and cut into strips. Peel the onions and slice them into fine rings. Combine all in a large bowl.

    For the dressing whisk together the broth, mustard, vinegar, herbs, salt, pepper, and sugar. Stir in the oil and mix with the salad ingredients. Let it marinate for at least 30 minutes.
