Wine Orchard Peach Compote with Mint

Ingredients
- 1 kg wine orchard peaches
- 100 ml apple juice
- 150 g sugar
- 1 untreated lemon (juice and zest)
- 4 sprigs Mint

Heat the peaches until they are soft, then cool, peel, halve, remove pits and roughly cube the flesh. Bring the apple juice with sugar and 100 ml water to a boil. Add the peaches, lemon juice and zest, and simmer for about 10 minutes to thicken into a compote.

Remove the lemon zest again. Wash the mint, shake dry, pluck leaves and finely chop. Stir into the compote and fill prepared jars. Seal tightly and let cool completely.
