Ingredients
- 50 ml lime juice
- 2 tbsp sugar
- 100 ml Blue Curacao
- 2 egg whites
- 1 pinch salt
- 600 ml dry white wine
- lime wedge
- lemon balm leaf

Whisk together lime juice, sugar, and Blue Curacao.

Beat the egg whites with salt until stiff peaks form, then fold in the liquid mixture evenly. Continue beating until no large bubbles remain.

Gradually incorporate about 100 ml of white wine.

Pour the mixture into an ice cream maker and churn for approximately 30 minutes, or pour into a shallow metal bowl and freeze for about 3 hours, stirring thoroughly every so often.

Scoop the sorbet into small bowls and top each with half the remaining white wine, garnished with lime wedges and lemon balm leaves. Serve immediately.
