Ingredients

  • 4 sheets of white gelatin
  • 4 egg yolks
  • scraped vanilla bean pulp from 1 vanilla pod
  • 5 tbsp wild mint syrup
  • 150 ml each of white wine and whipping cream
  • 150 g whole milk yogurt
  • 1 Mango
  • 250 g strawberries
  • 3 tbsp Lemon juice
  • 2 tbsp sugar

Instructions

    Soak gelatin in cold water. Whisk egg yolks with vanilla pulp and syrup until thick and creamy. Warm wine briefly, dissolve the squeezed gelatin in it, and stir into the egg mixture. Chill for 15 minutes.

    Whip cream to stiff peaks. Stir the mousse again, fold in yogurt, then fold in whipped cream, and chill for at least 2 hours.

    Peel mango, remove flesh from pit, dice. Wash, trim, and quarter strawberries. Mix lemon juice with sugar and stir into fruit.

    Scoop mousse onto a plate with a tablespoon spoonful of garnish and serve alongside the fruit salad.
