Christmas Muffin

Ingredients

  • 250 g dark chocolate
  • 50 g butter
  • 275 g flour
  • 0.5 tsp gingerbread spice
  • 40 ml rum
  • 1 tbsp cocoa powder
  • 1 tsp Baking powder
  • 100 g sugar
  • 3 eggs
  • 4 Tbsp sunflower oil
  • 125 g yogurt
  • powdered sugar (for dusting)
  • 1 muffin tin (12 cups)
  • 12 paper liners

Instructions

    Coarsely chop the chocolate and melt it over a double boiler. Melt the butter in a small saucepan. In a mixing bowl combine flour, cocoa powder, gingerbread spice, baking powder, and sugar. Whisk the eggs with rum and oil, then mix in the melted butter, chocolate, and yogurt. Add the dry mixture and stir just until the dry ingredients are moistened.

    Line the muffin cups with paper liners and spoon the batter into them. Bake in a preheated oven at 180°C for about 20–25 minutes. Remove, let cool in the pan for another 5 minutes, then lift out and allow to cool completely.

    Dust with powdered sugar. Optionally place stars on top and remove after dusting.
