Ingredients

  • 120 g soft butter
  • 120 g sugar
  • 1 egg
  • 0.5 vanilla pod (aroma)
  • 250 g flour
  • 1 tsp Baking powder
  • 1 untreated orange (juice and zest)
  • 40 g ground almonds (peeled)
  • 200 g white couverture chocolate
  • 100 ml whipping cream
  • 100 g butter
  • 50 g candied orange peel
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Beat the butter with the sugar until fluffy. Add the egg and vanilla aroma and mix well. Gradually sift in the flour with the baking powder and combine with the orange juice, zest, and almonds into a smooth dough. Scoop small portions onto a parchment-lined tray spaced apart, forming about 40 little mounds. Bake in the preheated oven for approximately 12 minutes. Remove and let cool.

    For the filling, chop the couverture chocolate. Bring the cream to a boil, remove from heat, add the chocolate and stir until melted. Let the mixture cool until it is still slightly creamy. Beat the butter until fluffy and fold in the chocolate gradually. Fill a piping bag with the mixture. Pipe half of the Whoopie Pies with the filling, place a matching pie counterpart on top, and press lightly. Finely chop the candied orange peel and sprinkle over the pies. Dust with powdered sugar.
