Wild Garlic Dip

Ingredients

  • 1 tbsp cashews
  • 1 Spring onion
  • 100 g wild garlic
  • 1 clove garlic
  • 2 tsp lime juice
  • 100 ml Rapeseed oil
  • Salt
  • Pepper (freshly ground)
  • Cayenne pepper

    Chop the cashews and toast them in a dry pan until fragrant.

    Trim, rinse, and slice the spring onion into thin rings. Rinse the wild garlic, shake off excess water, and roughly chop it. Peel and mince the garlic clove. Combine the toasted cashews, spring onion rings, chopped wild garlic, minced garlic, and lime juice in a bowl. Blend with an immersion blender until smooth. Gradually whisk in the rapeseed oil. Season with salt, pepper, and cayenne pepper to taste.
