Tomato Dip with Spring Onions

Ingredients
- 2 cans pizza tomatoes
- 4 tbsp tomato paste
- 1 tsp Oregano
- 1 bunch spring onions
- 1 Garlic clove
- 1 tsp coriander
- 1 tsp cumin
- 2 chili peppers
- Salt
- Pepper
- tortilla chips (for dipping)

Clean the spring onions, trim the ends, and slice into thin rings. Peel and finely chop the garlic. Heat oil, sauté the onions, then add garlic, tomatoes, tomato paste, and oregano; simmer over medium heat for 30 minutes.

Halve the chili peppers lengthwise, remove seeds, and dice finely. Add cumin and coriander with the chilies to the sauce, season with salt and pepper, and let it cool at room temperature for an hour before serving with tortilla chips.
