Ingredients

  • 100 g Soft Butter
  • 50 g sugar
  • 100 g cream cheese
  • 100 g powdered sugar
  • 60 g apricot jam
  • 50 g chopped pistachios
  • 30 g dried cranberries
  • 275 g soft butter
  • 100 g brown sugar
  • 2 Eggs
  • 200 g Flour
  • 100 g ground hazelnuts
  • 1 tsp Baking powder
  • 1 pinch salt
  • 1 tsp cinnamon powder
  • 30 g dried apricots
  • 30 g dried cranberries

Instructions

    Cream the butter with the brown sugar. Add the eggs and beat until light and fluffy. Mix the flour with the hazelnuts, baking powder, salt, and cinnamon and fold into the butter mixture to form a smooth dough. Chop the apricots and cranberries and fold them in.

    Preheat the oven to 180°C fan.

    Scoop small portions of dough onto parchment-lined trays and bake for 10-15 minutes until golden brown. Remove carefully and cool on a wire rack.

    For the filling, cream butter with sugar and stir in the cream cheese. Gradually add powdered sugar until spreadable. Spread the filling over half of the pies (bottom side) and place another cookie on top.

    Decorate each pie by spreading a little jam and sprinkling pistachios and chopped cranberries.
