Ingredients

  • 120 g soft butter
  • 120 g sugar
  • 1 egg
  • 0.5 vanilla bean (pulp)
  • 250 g flour
  • 1 tsp Baking powder
  • 150 ml milk
  • 3 tbsp cocoa powder
  • 40 g ground almonds
  • 40 g Butter
  • 3 tbsp sugar
  • 200 g marshmallow cream (jar)

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Beat the butter with the sugar until fluffy. Add the egg and vanilla pulp and mix well. Gradually sift in the flour with baking powder, then add milk, cocoa and almonds, mixing into a smooth dough. Scoop small portions onto a parchment-lined tray and bake for about 15 minutes. Remove and cool.

    For the filling, beat butter with sugar until pale creamy. Fold in marshmallow cream and spread on half of the cookies (bottom side) (spray if desired). Top with another cookie. Serve chilled.
