Ingredients
- 120 g soft butter
- 120 g sugar
- 1 egg
- 0.5 vanilla bean (pulp)
- 250 g flour
- 1 tsp Baking powder
- 150 ml milk
- food coloring (red)
- 2 tbsp cocoa powder
- 40 g ground almonds
- 40 g Butter
- 3 tbsp sugar
- 150 g marshmallow cream (ready-made)

Preheat the oven to 180°C with top and bottom heat.

Beat the butter with the sugar until fluffy. Add the egg and vanilla pulp and mix well. Gradually sift in the flour with the baking powder, then add milk, food coloring, cocoa and almonds, mixing into a smooth batter. Scoop small portions onto a parchment-lined tray, about 30 tiny mounds. Bake in the preheated oven for about 15 minutes. Remove and let cool.

For the filling, beat butter with sugar until pale creamy. Fold in marshmallow cream and spread this on half of the cookies (bottom side), then top with another cookie. Serve well chilled.
