Ingredients
- 500 g mixed berries (e.g., strawberries, raspberries, blackberries, blueberries)
- 5 fresh mint leaves
- 4 tbsp sugar
- 7 gelatin sheets
- 320 ml dry white wine
- 200 ml white grape juice
- 3 tbsp elderflower syrup
- 4 scoops vanilla ice cream
- 4 mint sprigs

Wash and pat the berries dry. Finely chop the mint. Combine berries, sugar, and mint in a bowl and let marinate for about 20 minutes before dividing into four decorative glasses.

Soak gelatin sheets in cold water. Warm the white wine and dissolve the drained gelatin in it. Stir in grape juice and elderflower syrup, then pour over the berries just before the mixture starts to set. Chill in the refrigerator for about 4 hours until firm. Serve each glass with a scoop of vanilla ice cream and a mint sprig garnish.
