Ingredients
- 2 Eggs
- 30 g soft butter (room temperature; 2 tbsp)
- 20 g sugar (1 tbsp)
- 200 g Whole Wheat Flour
- 1 tsp Baking powder
- 100 g yogurt (1.5% fat)
- 100 ml milk (1.5% fat)
- 1 pinch salt
- 1 Mango
- 22 g berries (e.g., strawberries and blueberries)
- 1 tbsp Maple Syrup

Separate the eggs. Beat half of the butter with the sugar until fluffy, then mix in the yolks.

Sift the whole wheat flour with baking powder. Combine with the fluffy butter mixture, yogurt, and milk to form a smooth batter.

Beat the egg whites with a pinch of salt until stiff peaks form, then fold into the waffle batter. Heat a waffle iron greased with the remaining butter; cook 8 waffles until golden yellow and keep warm.

Meanwhile, peel the mango, remove the flesh from the pit, and cut into wedges. Rinse the berries, drain them, and halve if desired.
