White Wine Apples with Nuts

Ingredients
- 1 untreated lemon
- 1 piece ginger (about 3 cm)
- 500 ml dry white wine
- 2 sage leaves
- 1 cinnamon stick
- 1 tsp cloves
- 3 cardamom pods
- 2 star anise
- 150 g sugar
- 4 large apples
- 40 g honey
- 50 g sugar
- 2 tbsp butter
- 150 g mixed nuts (e.g., walnuts, macadamia nuts, almonds, hazelnuts)
Instructions

Wash the lemon hot, dry rub it, peel half of the zest and then squeeze out the juice. Peel the ginger and slice thinly.

Bring the wine with ginger, spices, sugar, 1 tbsp lemon juice and zest to a boil in a pot. Simmer for about 10 minutes over medium heat.

Peel the apples, use a corer to remove cores, halve them crosswise and trim slightly on the sides so they stand well later. Then place them in the liquid. Poach lightly for 3-5 minutes, remove from heat and let the apples cool in the liquid.

Caramelize honey with sugar and butter gently. Roughly chop nuts and fold in.

Place apples on a plate, pour some of the liquid over them and serve garnished with nuts.
