Swedish Christmas Cookies

Ingredients
- 250 g butter
- 125 g sugar
- 400 g flour
- 1 egg yolk
- 1 pinch salt
- 1 Egg white
- 100 g sugar
- 1 tsp cinnamon powder
- 5 tbsp lingonberry jam
Instructions

Knead butter, sugar, egg yolk, salt and flour quickly into a dough. Divide the dough into 4 parts and roll each into about 4 cm diameter rolls. Wrap each in cling film and refrigerate for 1 hour.

Cut the dough rolls into about 4 mm thick slices and place on a baking sheet lined with parchment paper. Optionally cut letters from the center of each cookie with a cookie cutter.

Whisk egg white lightly and brush the cookies with it. Mix sugar and cinnamon and sprinkle over the cookies. Bake in a preheated oven at 200°C (middle rack) for about 8–10 minutes. Remove and let cool.

Optionally warm lingonberry jam and sandwich two cookies together with a little jam.
