Walnut and Grape Cake

- 75 g walnut kernels
- 500 g grapes
- 50 g rolled oats
- 150 g butter
- 80 g sugar
- 3 eggs
- 150 g flour
- 2 tsp Baking powder
- 200 g whipping cream
- 1 packet vanilla sugar
- 12 half walnut kernels (for garnish)

Wash, trim and pat dry the grapes. Line a springform pan bottom with parchment paper, grease the rim and dust with flour. Toast the rolled oats in a dry skillet until fragrant. In a mixing bowl whisk the butter with an electric hand mixer until fluffy. Gradually fold in sugar and eggs. Mix the flour with ground walnuts, toasted oats and baking powder, then stir into the batter. Finally fold in the grapes. Pour the dough into the pan, smooth the top and bake at 180°C (lower rack) for about 1 hour. Let the finished cake cool in the pan for 10 minutes, then transfer to a plate to cool completely.

To serve, whip the cream with vanilla sugar until stiff peaks form and decorate the cake with 12 dollops of whipped cream topped with walnut halves.
