Pear with Cheese

Ingredients
- 2 untreated oranges
- 500 ml dry red wine
- 50 g sugar
- 4 pears
- 250 g blue mold cheese
- 30 g walnut kernels
- 1 tsp sesame seeds
- 3 tbsp sugar

Wash an orange hot, pat dry and thinly slice the peel (without the white pith). Juice both fruits and combine with the peel, red wine, and sugar in a small pot; bring to a boil.

Peel the pears, remove the core from the bottom while leaving the stem attached. Place them in the wine reduction so they are covered, and let them steep for about 5 minutes over gentle heat. Remove from heat and allow the pears to cool in the liquid.

Remove the pears, drain well, and slice into 5-6 pieces. Slice the cheese thinly as well and alternately layer the cheese and pear slices on four plates.

Coarsely chop the walnuts and roast them with sesame seeds in a hot pan without oil until fragrant. Remove and let cool. In the same pan add sugar and melt it, stirring only occasionally to avoid splattering. Add 3-4 tbsp water (watch for splashes!), reduce briefly, then remove from heat and let cool slightly. Add the walnuts and seeds to the caramel and scatter around the pears on the plates. Serve immediately.
