Christmas Wine Foam Truffles with Grapes and Caramel

Ingredients

  • 4 truffle pralines (dark chocolate)
  • 150 ml whipping cream
  • 6 fresh egg yolks
  • 80 g powdered sugar
  • 1 pinch salt
  • 120 ml white wine (dry or Marsala, as desired)
  • caramel strands for garnish

Instructions

    Cut the truffles into small pieces. Whip the cream until stiff and fill a piping bag with a star tip. Chill until serving.

    In a metal mixing bowl, combine egg yolks, powdered sugar, salt, and 1 tbsp water. Place over a hot water bath and whisk until frothy; gradually add Marsala while continuing to beat, then stir in wine until creamy (do not let it get too hot).

    Remove from heat, continue stirring slightly, then pour the cream into glasses. Add truffles, top with whipped cream and drizzle caramel strands, and serve immediately.
