White Mousse with Berries

Ingredients

  • 12 fresh raspberries
  • 40 g chopped pistachios
  • 3 sheets gelatin
  • 200 g white chocolate
  • 1 egg
  • 1 yolk
  • 50 g sugar
  • 200 ml whipping cream

Instructions

    Soak the gelatin in cold water. Chop the white chocolate and melt it over a double boiler. Whisk the egg and yolk with the sugar over the double boiler until light and creamy (do not let it boil!). Remove from heat, squeeze out excess water from the gelatin and fold it into the chocolate mixture. Let cool (or stir in a cold water bath). Whip the cream to stiff peaks and when the chocolate starts to set, fold the whipped cream in. Spoon the mousse into serving cups and chill for at least 3 hours.

    Wash the raspberries and gently pat them dry with paper towels.

    Before serving sprinkle about 1 tsp chopped pistachios over each mousse and top with 3 fresh raspberries.
