Ingredients
- 150 g full‑fat milk chocolate
- 2 sheets white gelatin
- 4 tbsp soluble coffee powder
- 2 Eggs
- 20 ml coffee liqueur
- 1 pinch salt
- 30 g sugar
- 500 ml whipping cream
Instructions

Chop the chocolate and melt it over a double boiler. Soak the gelatin in cold water.

Whisk 100 ml of cream with the soluble coffee powder.

Separate one egg; whisk the yolk and the remaining egg into the coffee‑cream mixture over a double boiler until thickened. Squeeze out excess water from the gelatin and dissolve it in the mixture. Stir in chocolate and liqueur. Chill until beginning to set.

Beat the egg white with a pinch of salt, gradually adding sugar until stiff peaks form. Whip the remaining cream to stiff peaks and fold both into the mousse base.

Divide the mousse among 4–6 cups and refrigerate for at least 4 hours.
