White Chocolate Strawberry Pralines

Ingredients
- 350 g white couverture chocolate
- 180 g strawberries
- 6 tbsp champagne (or sparkling wine)
- 3 tsp maple syrup
- 1 pinch vanilla essence
- 0.5 tsp guar gum
- pink peppercorns (for garnish)

Coarsely chop about 100 g of couverture and melt over a hot, non-boiling water bath. Wash, trim, and finely dice the strawberries; blend with champagne, maple syrup, vanilla essence, and guar gum into a smooth sauce. Chill the sauce.

Prepare 30 praline molds and pour liquid chocolate onto them. Using a small spoon, lift the couverture along the edges of each mold so they are thinly coated. Place the molds in the refrigerator for about 15 minutes.

Meanwhile melt the remaining couverture over the hot water bath; allow it to cool slightly.

Spoon roughly half of the strawberry filling onto the chilled chocolate in each mold and cover with liquid chocolate. Sprinkle pink peppercorns on top and refrigerate for about 30 minutes until set.
