Ingredients

  • 4 sheets gelatin
  • 200 g white chocolate
  • 2 Eggs
  • 2 egg yolks
  • 50 g sugar
  • 20 ml white rum
  • 200 ml whipping cream
  • white chocolate snowflakes
  • fresh fruit (e.g., blackcurrants and physalis)
  • powdered sugar (for dusting)

Instructions

    Soak the gelatin in cold water. Chop the white chocolate and melt it over a double boiler. Whisk the eggs, egg yolks, sugar, and rum over the double boiler until the mixture is pale and creamy (do not boil). Remove from heat, stir in the pressed gelatin and melted chocolate. Let cool or whisk in a cold water bath. Beat the cream to stiff peaks; when the chocolate mixture starts to set, fold in the whipped cream. Pour the mixture into a shallow dish and cover for at least 3 hours in the refrigerator.

    For serving, cut out portions of the mousse with a spoon dipped in hot water and place on plates. Garnish with chocolate flakes and fresh fruit as desired. Dust with powdered sugar before serving.
