Wheat Bread

Ingredients
- 500 g wheat flour type 550
- 100 g wheat bran (Type 1700)
- 300 ml lukewarm water
- 1 cube fresh yeast (42 g)
- 3 tbsp olive oil
- 1 tsp salt
- flour (for the work surface)

Add flour to a bowl, set aside 1 tbsp of wheat bran. Mix remaining bran, 2 tbsp oil and salt with the flour. Dissolve yeast in lukewarm water and combine with the flour mixture. Knead into a smooth dough using the paddle attachment of an electric hand mixer, cover and let rise for about 45 minutes in a warm place.

Afterward knead the dough thoroughly on a floured surface, shape it into a ball and let rise again for about 45 minutes. Stretch the dough ball lengthwise, brush with remaining oil, sprinkle with reserved bran and make several diagonal slashes. Bake in a preheated oven at 240°C for 10 minutes, then reduce temperature to 200°C and bake for an additional 20–25 minutes.
