Waffles with Plum Compote

Ingredients

  • 5 g Ginger
  • 1 Vanilla bean
  • 500 g fresh plums
  • 200 ml black currant juice
  • 2 tbsp sugar
  • 4 eggs
  • a pinch of salt
  • 250 g flour
  • 0.5 tsp cinnamon
  • 80 ml whipping cream
  • 150 ml buttermilk
  • 3 tbsp sugar
  • 1 tsp Baking powder
  • butter shortening (for the waffle iron)
  • 150 ml whipping cream

Instructions

    Peel and finely grate the ginger. Split the vanilla bean lengthwise and scrape out the seeds. Wash, halve, and pit the plums. In a pot, heat the juice with an equal amount of water, add sugar, ginger, vanilla bean, and seeds. Bring to a boil and simmer for about 15 minutes, stirring occasionally.

    Separate the eggs. Beat the whites with salt into stiff peaks. Whisk the yolks with flour, cinnamon, cream, buttermilk, sugar, and baking powder, then let rest for about 20 minutes before folding in the egg whites. Pour 2–3 tbsp of batter into a hot, buttered waffle iron and cook golden waffles one at a time. Keep warm in an oven at 80 °C (fan) if desired.

    Whip the cream until stiff and serve it over the waffles with plum compote.
