Watermelon Jelly

Ingredients

  • 500 g watermelon
  • 2 untreated oranges
  • 3 tbsp Campari
  • 25 g Gelfix super (1 packet)
  • 400 g sugar
  • 5 g citric acid

Instructions

    Cut the flesh of the watermelon into very small pieces, put them in a fine sieve and press out the juice with the back of a spoon – yields about 400 ml fruit juice.

    Wash the oranges and halve them. Slice one half into rounds, cut the slices in half again and place them in hot-washed jars. Juice the remaining three halves. Pour 8 tbsp of that juice with Campari into the watermelon juice and top up to 750 ml with water.

    Mix Gelfix with 2 tbsp sugar, add the citric acid and the watermelon juice in a pot. Stir and bring to a boil, then add the remaining sugar and cook while stirring according to the package instructions. Fill the jars with orange slices, seal tightly and invert them. When the jelly is almost set, turn the jars back over so that the filling distributes evenly in the middle.
