Ingredients

  • soft butter (for the baking tray)
  • Flour (for the baking tray)
  • 150 g butter
  • 150 g sugar
  • 3 eggs
  • 1 untreated orange (juice and zest)
  • 200 g Flour
  • 1 tsp Baking powder
  • 3 tbsp strawberry syrup
  • 120 g soft butter
  • 125 g powdered sugar
  • 125 g mascarpone
  • 1 tbsp strawberry jam (without pieces)
  • 36 sugared egg whites

Instructions

    Preheat the oven to 180°C fan. Grease the cupcake liners and dust them with flour.

    Beat the butter with the sugar until fluffy. Whisk the eggs with orange juice and zest, then fold in the flour and baking powder. Mix well and pour the batter into the liners. Bake for about 25 minutes until golden brown. Remove from oven and cool before unmolding.

    Brush the cupcakes with strawberry syrup. For the cream, beat the butter with 50 g powdered sugar until creamy. Stir in mascarpone and jam. Add remaining powdered sugar until a piping-appropriate consistency is reached. Pipe the cream onto the cupcakes using a star tip and top with sugared egg whites.
