Ingredients

  • 500 g mixed berries (raspberries, blueberries, blackcurrants, strawberries)
  • 1 EL cornstarch
  • 100 ml cherry juice
  • 100 ml red currant juice
  • sugar
  • 0.5 Vanilla pod
  • 1 raw orange
  • 1 cinnamon stick

Instructions

    Separate the currants, blueberries and raspberries, rinse gently and pat dry on kitchen paper. Wash the strawberries, trim them and cut lengthwise or into quarters depending on size.

    Whisk the cornstarch with about 3 EL of red currant juice. In a pot combine the remaining red currant juice, cherry juice and sugar. Slice the vanilla pod lengthwise, scrape out the seeds and add both the seeds and the pod to the pot. Wash the orange hot, pat dry and peel a strip of zest with a peeler. Add the cinnamon stick.

    Bring the liquid to a boil. Stir in the prepared cornstarch mixture and simmer gently for about 2 minutes on low heat.

    Pour the thickened syrup through a sieve into a large bowl. Add the berries and stir once gently. Spoon the red berry compote into dessert cups or glasses and let it cool.
