Ingredients
- 180 g sugar
- 300 ml water
- 1 piece cinnamon stick
- 500 g fresh blue grapes
- juice of one lemon
- fresh grapes (for garnish)
- 200 ml red wine

Boil sugar, water and cinnamon stick briefly then let cool. Remove cinnamon. Wash grapes, deseed and blend in a mixer, stir in lemon juice, mix with simple syrup and freeze until creamy.

i.e., pour the sorbet mixture into an ice cream maker and finish, or place it in a wide metal bowl and freeze; after about 30 minutes stir the mixture well with a whisk or electric mixer and return to freezer. Repeat stirring until desired consistency is reached.

For a semi-liquid variant prepare the sorbet as above and add another 200 ml good red wine. Let chill slightly and pour into glasses. Garnish with halved grapes.
